Functional food with emerging properties to support the low-calorie diet

Through the SINERGEM project we propose the realisation of a functional food in the form of a protein bar that can be used as an adjuvant in low-calorie diets, based on a combination with emerging properties of polyphenols and polysaccharides from the pulp/residue of berries (by-product of the fruit juice production at the partner economic agent) and chia seeds.
The objectives of the project are:
- (i) selection of a synergistic composition of polyphenols and polysaccharides;
- (ii) obtaining a gastro-resistant nanoform of the synergistic composition;
- (iii) incorporation of the nanoformulated composition into the protein rod and verification of the preservation of the emergent properties.
The expected outcomes of the project are: a mixture of polyphenols and polysaccharides (extracted from berry residues) and chia seeds, selected by a combination of high-throughput techniques and encapsulated in gastro-resistant nanoformulated liposomes that are included in the protein bar.
