Multifunctional products made from fermented colostrum with kefir granules

The 3-Biotic+ project aims to develop a complex, multifunctional, 3-biotic (having a cumulative pre-, pro- and post-biotic effect) product with a standardised bioactive peptide content, obtained by controlled fermentation of colostrum with an improved bacterial consortium from kephir. In the experimental development phase of this project, new ranges of nutraceuticals and cosmeceuticals will be obtained from this product. The objectives of the project are: (i) to select an improved bacterial consortium from kefir, capable of generating bioactive peptides and other additional bioactive compounds from colostrum by fermentation; (ii) to optimise the fermentation process and formulate the resulting product for nutraceutical and cosmeceutical applications; (iii) to demonstrate the functionality of the products obtained from the fermented colostrum by the improved bacterial consortium from kefir. An innovative approach is the one targeting bioactive peptides, key components for the standardisation of the 3-biotic complex product. Another innovation is the complex approach of the new multifunctional product, which is in line with the current trend towards integrated and personalised treatment. It is also envisaged to correlate the activities and coordinate the research between the project partners (an SME, a university and a CD institute from Romania and an SME from Norway). The project will contribute through the implementation phase (experimental development) to the upgrading of the technological level from TRL3 to TRL7/TRL8. The main outcome will be a multifunctional, 3-biotic product with a standardised bioactive peptide content. It will be included in specific nutraceutical and cosmeceutical recipes and patented by the project partners. The SME's position on the market will be strengthened by diversifying its range of innovative products.
