Analytical approach to understanding positive synergistic effects of melatonin on polyphenolic profile and antioxidant capacity

The main objective of the project was to study the positive synergistic effects of melatonin on the polyphenolic profile and the evolution of antioxidant activity in red wines in order to understand the mechanism underlying the melatonin-induced enhancement of antioxidant capacity.
The main objective of the project has been fully realised and the estimated verifiable results obtained are: 1 protocol for melatonin sampling from wine samples; 1 validation report for a HPLC method for melatonin analysis; 1 report with the parameters of the newly developed electrochemical sensor, 1 validation report of the electrochemical sensor against resveratrol; 1 protocol for melatonin application to obtain an improved red wine; 2 protocols for the vinification process of improved red wines; 1 analysis report with the values of polyphenolic compounds and antioxidant activity in the produced wines; 1 scientific report on the positive synergistic effects of antioxidant active principles in red wines; 4 participations in international conferences; publication of 3 ISI articles; 1 patent application filed at the State Office for Inventions and Trademarks.
