Exploiting the antioxidant capacity of black grapes for producing wines with high authentic quality

The ANTIOXOXWIN project aims to develop new means to obtain wines with high quality characteristics and proposes ways to recognise their unique characteristics in order to affirm and protect their identity. More specifically, we will select some red wines with Controlled Designation of Origin from the Dealu Mare vineyard and use their antioxidant potential (phenolic compounds profile and total antioxidant capacity) as a quality indicator. We will develop an optimised technological process whose monitoring will include the verification of the antioxidant capacity of the intermediate products using an electrochemical sensor (i); a detailed wine profile that includes, in addition to the usual parameters in the wine file, a detailed characterisation of the phenolic compound composition, anthocyanin structure and total antioxidant capacity, all synthesised in a database (ii) and new methods for wine classification and authenticity, i.e. an e-tongue device and a chemometric model that will exploit the information in the database to define the "antioxidant fingerprint" of the wines. The synergy between the existing infrastructure and the scientific capabilities of the partners will allow a complex, multidisciplinary assessment of wine quality and the generation of new technology, sensors and high quality information, thus significantly advancing the state-of-the-art in the field. A special feature of the project is to maximise the extraction of relevant information and the practical application of the generated data. The results estimated in ANTIOXWIN (optimised technology, total antioxidant capacity sensor, antioxidant database, e-tongue device and "antioxidant fingerprint") will provide new tools and means to wine producers, quality control laboratories, organisations involved in the quality of wines with controlled designation of origin etc. and will increase the consumers' perception of the quality of Romanian wines.
